Soki Soba is the staple dish in Okinawa.
At our first virtual festival, Pagoda Floating Restaurant has its own version of Soki Soba. The tender boneless pork is from Mountain View Dairy in Waianae, all hogs are naturally fed. It is marinated in awamori for two days to absorb the rich sauces. The awamori dissipates upon cooking. The quality soba is from Sun Noodle in Kalihi. Pagoda's secret ingredients adds extra "dashi" to the soup base.
